Bright And Beautiful
|Egg whites||2 , stiffly beaten|
|Butternut squash/Banana squash||1 1⁄2 Cup (24 tbs), cooked and mashed|
|Cranberries||1⁄2 Cup (8 tbs), chopped|
1. Fold stiffly beaten egg whites into mashed squash.
2. Gently fold in cranberries. Pour into a 1 1/2 quart nonstick casserole. Garnish with nutmeg. Bake at 400° for 35 to 40 minutes.
