Quick And Crunchy
|Stale bread slices||3 , cubed|
|Onion||1 Medium, finely chopped|
|Zucchini||4 Cup (64 tbs), sliced|
|Frozen apple juice||2 Tablespoon|
|Seasoned salt||1 Teaspoon|
In skillet, cook bacon crisp; remove and keep warm.
Pour off and reserve all but 2 tablespoons of the bacon fat.
Toast bread, cube, and saute bread cubes in this fat until brown; remove and keep cubes hot.
Return 2 tablespoons of reserved fat to skillet.
Saute onions and zucchini, stirring gently, until zucchini is barely tender crisp.
Add vinegar, apple juice, and salt.
Simmer a few minutes, stirring occasionally.
Crumble hot bacon; add bacon and bread cubes to zucchini, stir in, and serve at once.
