|Zucchini slices||4 1⁄2 Inch (From Large One)|
|Brown rice||1 Cup (16 tbs) (Cooked)|
|Cheddar cheese||1⁄3 Cup (5.33 tbs), grated|
|Ham/Chicken / leftover meat||1⁄2 Cup (8 tbs), minced|
|Seasoned salt||1⁄2 Teaspoon|
|Ground pepper||To Taste|
|Red wine||1⁄4 Cup (4 tbs) (For Basting)|
Cut across zucchini in 1-1/2 inch slices; do not peel.
Remove center pulp and seeds; discard, leaving large rings for stuffing.
Put these on greased baking sheet or in shallow pan.
Combine all ingredients except paprika; fill centers of rings.
Sprinkle generously with paprika.
Bake at 350Â° for 35 minutes or until zucchini is tender, basting twice.
