Medley Of Vegetables
|Eggplant||1 Medium, peeled and cut in 1/2 inch slices|
|Zucchini||2 Medium, cut in 1/2 inch slices|
|Cream cheese||3 Ounce (1 Package)|
|Beer sauce||1 Cup (16 tbs)|
|Monterey jack cheese slices||3 Large|
|Cheddar cheese||4 Ounce, sliced|
Dip eggplant and zucchini in egg and saute in butter approximately 5 minutes on each side.
Place layer of eggplant in casserole; top with cream cheese and layer of zucchini; cover with beer sauce.
Continue layering, substituting monterey jack and cheddar cheese (reserve last slice of each) for cream cheese.
Top each layer with beer sauce; then put last slices of monterey jack and cheddar cheeses on top.
Place uncovered in oven and bake at 350Â° for 45 to 50 minutes.
