Sweet Potatoes In Milk And Honey
|Sweet potatoes||1 3⁄4 Pound|
|Milk||2⁄3 Cup (10.67 tbs)|
|Ground ginger||1⁄2 Teaspoon|
|Nutmeg||1⁄2 Teaspoon, grated|
Peel the sweet potatoes and slice into 1/4 inch (6 mm) rounds.
Mix together the milk and honey in a bowl and add the ginger, nutmeg, and salt and pepper to taste.
Heat in the oven on HIGH for 1 1/2 minutes.
Sprinkle salt and pepper in the base of a round dish 9 inches (22 cm) in diameter and arrange the sweet potato slices in it.
Sprinkle with salt and pepper.
Stir the contents of the bowl and pour over the vegetables.
Dot with butter.
Cover and microwave on HIGH for 10 minutes.
