Very Special Carrot Cake
|Sugar||2 Cup (32 tbs)|
|Vegetable oil||1 1⁄4 Cup (20 tbs)|
|Flour||2 Cup (32 tbs)|
|Baking soda||2 Teaspoon|
|Grated carrots||3 Cup (48 tbs)|
|Pecans||1 Cup (16 tbs)|
|Raisins||1⁄2 Cup (8 tbs)|
|Crushed pineapple||1 Cup (16 tbs), drained|
|For cream cheese icing|
|Cream cheese||4 Ounce|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Icing sugar||2 Cup (32 tbs)|
Cream sugar and oil.
Add eggs, 1 at a time.
Add flour, spices, salt and baking soda, mixing well.
Add grated carrot, pecans, raisins and pineapple.
Pour into a greased and floured 13x9 inch pan and bake in a 375 "F oven 50 to 60 minutes.
Cool and frost with Cream Cheese Icing.
