Banana Stuffed Sweet Potatoes

Ingredients
  Baked sweet potatoes 3 (Served Hot)
  Butter 3 Tablespoon, softened
  Grated orange rind 1 Teaspoon
  Orange juice 4 Tablespoon
  Dark rum 2 Tablespoon
  Chopped pineapple 1 Cup (16 tbs), well drained
  Bananas 3 , sliced
  Brown sugar 2 Tablespoon
  Grated coconut 2 Tablespoon
Directions

Cut the still hot baked potatoes in half lengthwise and scoop out the flesh, leaving a 1/4 inch shell.
Mash the potato with the butter.
Add the orange rind and juice, rum and pineapple.
Mix thoroughly.
Cut 3 ample squares of heavy duty aluminum foil and place 2 shells on each.
Line shell bottoms with banana slices and fill with sweet potato mixture.
Top with banana slices, brown sugar and coconut.
A beautiful companion to roast pork, chicken or turkey.
