Very Good Edible Red Sauce
|Canned italian plum tomatoes/2 pound fresh ripe plum tomatoes||16 Ounce (1 Can)|
|Butter||1⁄4 Pound (1 Stick)|
|Onion||1 Medium, peeled (Whole Ones)|
|Sugar||1⁄4 Teaspoon (1 Pinch)|
Chop tomatoes; combine tomatoes in juice with butter, whole onion, salt and sugar in a heavy sauce pan and bring to a slow boil.
Reduce to low heat and simmer for at least 1 hour, (maybe 1 1/2 hours).
Just before serving add a pat of butter to bring back the fresh taste of the cooked butter.
Serve with gnocchi or pasta shells.
