Wash potatoes; prick 2 to 3 times with a fork.
If desired, wrap in foil.
Bake at 400Â° F for 40 to 50 minutes until tender.
Using paper towels to protect hands from heat, roll potatoes between hands to make inside potato mixture light and mealy.
Make a cross slit on top of potato.
Gently press lower part of potato to force potato up through the slit.
Top with butter, salt and pepper and or one of these toppings: sour cream and chives crumbled cooked bacon chopped green onions crumbled bleu cheese shredded Cheddar cheese snipped parsley
