Mashed Sweet Potato Caramel

Ingredients
  Mashed sweet potato 2 Cup (32 tbs)
  Milk 1 Cup (16 tbs)
  Maple syrup 1⁄2 Cup (8 tbs)
  Butter 1⁄4 Cup (4 tbs)
Directions

Left-over sweet potatoes, either baked or boiled, may be used for this dish.
Mash potatoes and add sufficient milk or cream to make a smooth, soft paste.
Season with pepper and salt.
Put into a well-greased casserole.
Pour in thick maple sirup heated with butter.
Bake at 400° F.
until the top is caramelized.
