Orange-Flavored Candied Sweet Potatoes
|Sweet potatoes||4 Medium|
|Butter||1⁄4 Cup (4 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs), firmly packed|
|Orange juice||3 Tablespoon|
|Orange peel||1⁄2 Teaspoon, grated|
|Ground nutmeg||1⁄4 Teaspoon|
Partially cook potatoes as directed in chart for 8 to 10 minutes.
Peel and cut into 1/2 inch slices.
Place butter in a 1 1/2 qt.
glass casserole dish.
Microwave 1 minute to 1 minute 30 seconds or until melted.
Stir in brown sugar, orange juice, orange peel and nutmeg.
Add potato slices and toss to coat evenly.
Cover and microwave 12 to 14 minutes, stirring twice during cooking.
