Party Relish Tray

The party relish tray is prepared with marinated mixed vegetables. Made with cauliflower, mushrooms and carrots marinated with vinegar, oil and lemon juice, the party relish tray is prepped by serving the veggies on assorted greens.
  Vinegar 1⁄3 Cup (5.33 tbs)
  Salad oil 1⁄4 Cup (4 tbs)
  Lemon juice 2 Tablespoon
  Sugar 2 Teaspoon
  Whole mushrooms 8 Ounce
  Cauliflower flowerets 2 Cup (32 tbs)
  Carrots 3 Medium, cut into sticks
  Assorted greens 1 Cup (16 tbs)

For marinade, in a medium mixing bowl combine vinegar, salad oil, lemon juice, and sugar.
Add mushrooms, cauliflower, and carrots.
Toss to coat.
Place in a plastic bag in a bowl.
Seal tightly.
Let stand for 1 hour at room temperature or several hours in the refrigerator, turning occasionally to distribute marinade evenly.
Using a slotted spoon, remove vegetables from marinade.
On a large serving platter arrange marinated vegetables on greens.
Drizzle some of the remaining marinade over vegetables.
