Sweet Potato Pie
|Mashed cooked sweet potato||1 1⁄2 Cup (24 tbs) (375 Milliliter)|
|Brown sugar||1⁄2 Cup (8 tbs) (125 Milliliter)|
|Cinnamon||1 Teaspoon (5 Milliliter)|
|Ginger||1 Teaspoon (5 Milliliter)|
|Nutmeg||1 Teaspoon (5 Milliliter)|
|Eggs||2 , well beaten|
|Milk||1⁄2 Cup (8 tbs) (125 Milliliter)|
|Water||1⁄2 Cup (8 tbs) (125 Milliliter)|
|Pastry shell||1 (23 Centimeter)|
Preheat the oven to 450Â°F (230Â°C).
Combine the first 5 ingredients and beat well.
Beat in the eggs.
Combine the milk and water and scald either in the microwave or on the stove.
Add the hot milk mixture to the potato mixture and beat well.
Pour into the pastry shell.
Bake for 10 minutes.
Reduce the heat to 350Â°F (180Â° C) for a further 20-30 minutes or until a knife inserted in the centre comes out clean.
Serve decorated with whipped cream.
