Sweet And Sour Vegetable Skewers
|Pineapple||1⁄2 , peeled, cored and cut into 1 inch cubes|
|Green peppers||2 Large, seeded and cut into 1 inch squares|
|Cucumbers||2 , peeled, halved lengthwise and cut into 1/4 inch slices|
|Sweet pickles||4 , cut into 1/4 inch slices|
|Scallions||8 , cut diagonally into 1 inch lengths|
|Peanut oil||1 Cup (16 tbs)|
Alternate pineapple and vegetables on skewers; baste with oil.
Serve with roast chicken, pork or beef or grilled fish.
