Sweet And Sour Vegetable Skewers

Ingredients
  Pineapple 1⁄2 , peeled, cored and cut into 1 inch cubes
  Green peppers 2 Large, seeded and cut into 1 inch squares
  Cherry tomatoes 16
  Cucumbers 2 , peeled, halved lengthwise and cut into 1/4 inch slices
  Sweet pickles 4 , cut into 1/4 inch slices
  Scallions 8 , cut diagonally into 1 inch lengths
  Peanut oil 1 Cup (16 tbs)
Directions

Alternate pineapple and vegetables on skewers; baste with oil.
Serve with roast chicken, pork or beef or grilled fish.
