|Eggplants||2 Medium, cut in 1/2 inch slices|
|Olive oil||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), crushed|
Sprinkle the eggplant with salt and allow to stand for 30 minutes.
Combine the oil and garlic.
Press the eggplant slices dry between paper towels.
Brush with oil.
Great with all grills and roasts, but especially lamb.
