Savory Rice, Broccoli & Cheese Bake
|Margarine||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Sliced mushrooms||1⁄4 Pound|
|Cooked rice||1 1⁄2 Cup (24 tbs)|
|Broccoli||1 Pound, trimmed, cooked & chopped|
|Grated monterey jack cheese||1⁄2 Cup (8 tbs)|
|Milk||4 Tablespoon (60 Milliliter)|
|Black pepper||1⁄4 Teaspoon|
|Grated cheddar cheese||1⁄4 Cup (4 tbs)|
Preheat the oven to 350Â°F (180Â°C).
In a heavy skillet melt the margarine until bubbly; saute the onion, garlic and mushrooms until tender.
Meanwhile, in a large bowl, combine the cooked rice, broccoli and Monterey Jack cheese.
Stir in the sauteed mixture.
Beat together the eggs, milk, salt, black pepper and thyme and pour this mixture over the broccoli mixture.
Toss lightly until well combined.
Turn into a greased 8" (20 cm) square baking dish.
Sprinkle the grated cheese over top and bake for approximately 20-25 minutes or until just set.
