Savory Rice, Broccoli & Cheese Bake is a very popular dinner at home. Its easy to make and extremely filling! You just have to try he Savory Rice, Broccoli & Cheese Bake for yourself!
  Margarine 1⁄4 Cup (4 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), minced
  Sliced mushrooms 1⁄4 Pound
  Cooked rice 1 1⁄2 Cup (24 tbs)
  Broccoli 1 Pound, trimmed, cooked & chopped
  Grated monterey jack cheese 1⁄2 Cup (8 tbs)
  Eggs 2
  Milk 4 Tablespoon (60 Milliliter)
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Thyme 1⁄4 Teaspoon
  Grated cheddar cheese 1⁄4 Cup (4 tbs)

Preheat the oven to 350°F (180°C).
In a heavy skillet melt the margarine until bubbly; saute the onion, garlic and mushrooms until tender.
Meanwhile, in a large bowl, combine the cooked rice, broccoli and Monterey Jack cheese.
Stir in the sauteed mixture.
Beat together the eggs, milk, salt, black pepper and thyme and pour this mixture over the broccoli mixture.
Toss lightly until well combined.
Turn into a greased 8" (20 cm) square baking dish.
Sprinkle the grated cheese over top and bake for approximately 20-25 minutes or until just set.
