Sweet Potato Pudding
|Pared grated raw sweet potatoes||2 Cup (32 tbs)|
|Sugar||1 Cup (16 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Rich milk||1 Cup (16 tbs)|
|Melted butter||1⁄4 Cup (4 tbs)|
|Grated lemon peel||1⁄2 Teaspoon|
|Lemon juice||2 Teaspoon|
Beat eggs in a bowl until light.
Mix in the potatoes.
Beat in sugar, cinnamon, and a dash ground nutmeg.
Stir in remaining ingredients in order.
Turn into a buttered baking dish.
Bake at 350°F about 30 minutes; stir pudding with a spoon, blending sides with center.
Continue to bake 15 minutes.
