1) In a large ovenproof dish, place the vegetables and sprinkle a little seasoning, salt and pepper. Drizzle with the olive oil and hand toss all the vegetables.
2) Cover with a foil and place the vegetables in a preheated oven at 425 Degree F for 25 minutes, stir and then roast further for another 15-20 minutes.
3) Remove and serve in the nice serving plates.
