Banana-Sweet Potato Bake

Ingredients
  Cooked mashed sweet potatoes/Cooked mashed squash 1 Cup (16 tbs)
  Bananas 2 Medium
  Water 1 Cup (16 tbs)
  Nonfat dry milk solids 1⁄2 Cup (8 tbs) (Instant Variety)
  Egg yolks 2
  Honey/Sugar 2 Tablespoon
  Ground ginger 1⁄2 Teaspoon
  Dark rum 2 Tablespoon
  Egg whites 4
  Custard sauce 1 Cup (16 tbs)
Directions

Puree sweet potato, bananas, water, milk solids, egg yolks, honey, ginger, and rum in a food processor or blender.
Pour into a mixing bowl.
Beat 4 egg whites until stiff but not dry peaks form.
Fold into sweet potato mixture.
Spoon into a lightly oiled 9x5x2 inch baking dish.
Bake at 325°F 45 minutes.
Serve at room temperature, or refrigerate and serve cold.
Cut into slices.
Serve with custard sauce.
