Italian Potato Salad (Insalata Di Patate)
|Potatoes||2 Medium, boiled, peeled and diced|
|Chopped celery||1⁄3 Cup (5.33 tbs)|
|Diced pared cucumber||1⁄2 Cup (8 tbs)|
|Chopped ripe olives||1⁄2 Cup (8 tbs)|
|Minced onion||2 Tablespoon|
|Italian dressing||3⁄4 Cup (12 tbs)|
Lightly toss together the potatoes, celery, cucumber, olives, and onion.
With a fork, thoroughly but carefully blend in the dressing mixed with oregano.
Cover the salad.
Chill about 1 hour before serving.
