Aunt Carrie's Carrot Cake
|Sugar||2 Cup (32 tbs)|
|Vegetable oil||1 1⁄2 Cup (24 tbs)|
|Flour||2 1⁄4 Cup (36 tbs)|
|Baking soda||2 Teaspoon|
|Grated carrots||2 1⁄2 Cup (40 tbs) (Not Packed)|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Maple cream cheese||1 Tablespoon (Or As Required)|
Beat the sugar, vegetable oil, flour and eggs in a large bowl until smooth.
Add the baking soda, cinnamon and salt; mix well.
Stir in the carrots and pecans.
Spread in a greased and floured 9x13 inch cake pan.
Bake at 350 degrees for 50 minutes or until cake tests done.
Frost the cooled cake with Maple Cream Cheese Frosting.
