Golden Sweet Potatoes
|Sweet potatoes||2 Pound (4 medium size)|
|Brown sugar||2 Tablespoon|
|Dry sherry||3 Tablespoon|
|Orange juice||3 Tablespoon|
Boil sweet potatoes until easily pierced ,with a fork.
Slip off and discard skins.
Place potatoes in processor bowl with remaining ingredients.
Process with metal blade until smooth; scrape down sides and break up large pieces with spatula, if necessary.
Heap into a 1 quart casserole dish.
Dot with additional butter and bake at 350Â°F until reheated.
This dish may be prepared in advance and refrigerated.
If serving this with turkey, rewarm it in the oven with the turkey for about 20 to 25 minutes.
