Bacon-Stuffed Sweet Potatoes
|Sweet potatoes||5 Pound (8 Medium Units)|
|Vegetable oil||1 Cup (16 tbs)|
|Bacon slices||9 , cooked and crumbled|
|Commercial sour cream||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
Scrub potatoes thoroughly, and rub skins with oil, bake at 400Â° for 1 hour or until done.
Let cool to the touch.
Slice skin away from top of each potato; carefully scoop out pulp, leaving shells intact.
Mash pulp; add bacon and next 5 ingredients; mix well.
Spoon into shells; sprinkle with paprika.
Bake at 400Â° for 10 minutes.
