Riso Con Ceci
|Dried chick peas||1 Pound|
|Parsley||2 Tablespoon, chopped|
|Rice||1 Cup (16 tbs), uncooked|
|Olive oil||2 Tablespoon|
Cover chick peas with water and soak overnight.
Put in a saucepan with enough water to cover and cook over a high heat for one hour, adding more water to keep peas covered.
Reduce heat and cook for another hour.
Add more water when necessary.
Add parsley, salt and pepper to taste and rice.
Cook until peas and rice are tender.
Remove from heat and stir in the olive oil.
