Chick Peas With Rice (Riso Con Ceci) combines the flavors of chick peas, rice, parsley, pepper and olive oil. This is a simple and easy recipe and will go with any menu. Just give this Chick Peas With Rice (Riso Con Ceci) a try.
Ingredients
  Dried chick peas 1 Pound
  Parsley 2 Tablespoon, chopped
  Rice 1 Cup (16 tbs), uncooked
  Olive oil 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Cover chick peas with water and soak overnight.
Drain.
Put in a saucepan with enough water to cover and cook over a high heat for one hour, adding more water to keep peas covered.
Reduce heat and cook for another hour.
Add more water when necessary.
Add parsley, salt and pepper to taste and rice.
Cook until peas and rice are tender.
Remove from heat and stir in the olive oil.
