Grilled Red Potato Hash
|Chicken breast halves||2 , boned and skinned|
|Red potatoes||3 Large|
|White onion||1⁄2 Cup (8 tbs), chopped|
|Low fat margarine||2 Tablespoon|
|Seasoned salt||1 Tablespoon|
|Black pepper||1⁄2 Tablespoon|
|Fresh parsley||2 Tablespoon, minced|
|Non fat cooking spray||1|
Coat the grill with cooking spray and preheat for 5 minutes.
Grill the chick en for 5-7 minutes, or until completely cooked.
Chop into small pieces and set aside.
Clean the potatoes and chop into small cubes (about 1/4 inch).
Lightly coat the grill with the cooking spray and add the potato cubes.
Grill for 4 minutes.
In a small bowl,mix the margarine, salt and pepper with the onion and cooked chicken.
Add the chicken and onion mixture to the potatoes in the grill.
Spread evenly across the grill.
Grill for 3-4 additional minutes.
When the potatoes are tender, remove the hash to a serving bowl.
Garnish with the parsley and serve.
