Sweet-Sour Cabbage Medley
|Red cabbage head||1 Pound (Small)|
|Tart apple||1 Large, not pared|
|Onion||1 Medium, chopped (0.5 Cup)|
|Red currant jelly||1⁄4 Cup (4 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Tablespoon|
Halve, core, and dice apple.
Melt butter or margarine in large skillet; stir in cabbage, apple onion, jelly, water, lemon juice, and salt until well blended; cover.
Heat to boiling.
Simmer, stirring occasionally, about 25 minutes, or until liquid has almost evaporated and cabbage is tender.
