Steamed Bitter Greens
|Turnip greens||4 Ounce, trimmed|
|Mustard greens||4 Ounce, trimmed|
|Spinach||4 Ounce, trimmed|
|Bacon strip||4 , smoked and cut into cubes|
|Rice wine vinegar||1 Teaspoon|
Tear the mustard greens and spinach leaves in half, the turnip greens in thirds.
Rinse thoroughly under cold running water, taking care to pick out any residual grit.
Set aside to drain.
Fill the bottom of a steamer with water and add the bacon.
Bring to a boil, taking care that the water level is not high enough to boil up through the holes in the bottom of the steamer basket.
Put the greens in the steamer basket, cover, and steam for about 3 minutes, until wilted.Toss in the vinegar before serving.
