Grill Roasted Eggplant

Grilled Eggplant is a simple non-spicy dish. The eggplant and garlic are nicely roasted over a slow grill, mashed and seasoned with just salt. Join James and see him prepare the Grilled Eggplant. Try out this simple dish with some bread or combine with the lentils.
  Eggplant 1 Large
  Garlic 4
  Oil 1 Teaspoon
  Salt To Taste

1) Roast/grill an eggplant until all of the skin is charred and the eggplant is soft.
2) Similarly, place a few garlic cloves on an aluminium foil, add the oil and wrap to make a packet. Roast alongwith the eggplant.
3) Let it cool, remove the skin and scoop out eggplant in a bowl.
4) Add the roasted garlic, salt and mix well. Wrap in a foil and put back on grill for a few minutes.
