Mixed Vegetable Grill
|Red pepper||1 , seeded|
|Green pepper||1 , seeded|
|Purple onion||1 Small|
|Zucchini squash||1 Medium|
|Olive oil||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Black pepper||1 Tablespoon|
|Non fat cooking spray||1⁄2 Tablespoon|
Chop the peppers, onion, squash and carrot into 1/2-inch pieces.
Coat the grill with cooking spray and preheat for 5 minutes.
In a small bowl, combine the oil, lemon juice, pepper and salt.
Place the vegetables in the grill and sprinkle with the oil and lemon seasonings.
Grill for 6-8 minutes, or until vegetables are tender-crisp.
