Mixed Vegetable Grill is an amazingly tasty dish. I serve this often for one of those hearty dinner meals at home. Very filling and delicious, the Mixed Vegetable Grill is something you just shouldn’t miss.
Ingredients
  Red pepper 1 , seeded
  Green pepper 1 , seeded
  Purple onion 1 Small
  Zucchini squash 1 Medium
  Carrot 1
  Olive oil 2 Tablespoon
  Lemon juice 1 Tablespoon
  Black pepper 1 Tablespoon
  Non fat cooking spray 1⁄2 Tablespoon
Directions

Chop the peppers, onion, squash and carrot into 1/2-inch pieces.
Coat the grill with cooking spray and preheat for 5 minutes.
In a small bowl, combine the oil, lemon juice, pepper and salt.
Place the vegetables in the grill and sprinkle with the oil and lemon seasonings.
Grill for 6-8 minutes, or until vegetables are tender-crisp.
