Sweet Potato-Banana Casserole
|Sweet potatoes||6 Medium, peeled and quartered|
|Banana||1 Medium, mashed|
|Pineapple juice||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Half and half||2 Tablespoon|
|Almond extract||1⁄4 Teaspoon|
|Miniature marshmallows||1 1⁄2 Cup (24 tbs)|
Cook sweet potatoes in boiling water to cover for 20 minutes or until tender.
Mash potatoes, set aside.
Combine mashed banana and pineapple juice, mix well.
Add potatoes, sugar, half-and-half, almond flavoring, and salt, mix well.
Spoon into a greased 8-inch square casserole.
Cover and bake at 350Â° for 30 minutes or until thoroughly heated.
Top with marshmallows, and bake an additional 7 minutes or until golden brown.
