Sweet Potato Pie
|Mashed cooked sweet potatoes||2 Cup (32 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), softened|
|Eggs||2 , separated|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Unbaked pastry shell||9 Inch|
Combine sweet potatoes, butter, egg yolks, brown sugar, salt, and spices.
Stir in milk, and mix well.
Beat egg whites (at room temperature) at high speed of an electric mixer 1 minute.
Gradually add 1/4 cup sugar, 1 tablespoon at a time, beating until stiff peaks form.
Fold egg whites into sweet potato mixture.
Spoon mixture into unbaked pastry shell.
Bake at 400Â° for 10 minutes, reduce heat to 350Â°, and bake an additional 45 minutes or until set.
