Pineapple-Mallow Sweet Potatoes

Ingredients
  Sweet potatoes 18 Ounce (Vacuum-Pack)
  Crushed pineapple 8 Ounce, drained
  Miniature marshmallows 1 Cup (16 tbs)
  Margarine/Butter 1⁄4 Cup (4 tbs), softened
  Grated orange peel 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Margarine/Butter 1 Tablespoon
  Packed brown sugar 1⁄4 Cup (4 tbs)
  Chopped pecans/Chopped walnuts 1⁄4 Cup (4 tbs)
Directions

Mash potatoes in 1 1/2 quart casserole or bowl.
Stir in pineapple, marshmallows, 1/4 cup mar garine, the orange peel and salt.
Microwave 1 tablespoon margarine uncovered in 10 ounce custard cup until melted, 30 seconds to 1 minute.
Stir in brown sugar and pecans.
Sprinkle over potatoes.
Cover and microwave until hot, 6 to 7 minutes.
