Candied Sweet Potatoes
|Sweet potatoes||2 Small|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Pecans||2 Tablespoon, chopped|
|Pineapple juice||1 Tablespoon|
|Lemon juice||1 Teaspoon|
|Ground cinnamon||1⁄8 Teaspoon|
Cook sweet potatoes in boiling water 20 to 25 minutes or until tender.
Let sweet potatoes cool, peel and cut into 3/4-inch-thick slices.
Arrange sweet potatoes in a lightly greased shallow 1-quart casserole.
Combine sugar, pecans, juices, and cinnamon, mixing well, pour over sweet potatoes, tossing gently.
Dot with butter.
Bake, uncovered, at 350Â° for 30 minutes, spooning glaze over potatoes occasionally.
