Pork And Sweet Potato Bake

  Pork chops 6 , cut 1/2 inch thick (Loin, Rib Or Shoulder)
  Sauerkraut 2 Pound
  Dry mustard 1⁄8 Teaspoon
  Water 1⁄4 Cup (4 tbs)
  Raw sweet potatoes 6 Medium, pared and sliced lengthwise
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Apricot jam 1⁄2 Cup (8 tbs)
  Ginger 1⁄4 Teaspoon

1 Trim any excess fat from chops with sharp knife.
2 Heat large frying pan; rub with piece of cut-off fat; brown chops on both sides in pan; save for Step 4.
3 Spread undraineU sauerkraut in bottom of 2-quart baking dish; sprinkle with dry mustard and water.
4 Arrange sweet-potato slices around edge; place browned chops in center; sprinkle with salt and pepper.
5 Combine apricot jam and ginger; spread over sweet potatoes.
6 Bake, covered, in moderate oven (350°) 1 hour, or until chops and potatoes are tender when tested with a fork.
