Pork And Sweet Potato Bake
|Pork chops||6 , cut 1/2 inch thick (Loin, Rib Or Shoulder)|
|Dry mustard||1⁄8 Teaspoon|
|Water||1⁄4 Cup (4 tbs)|
|Raw sweet potatoes||6 Medium, pared and sliced lengthwise|
|Apricot jam||1⁄2 Cup (8 tbs)|
1 Trim any excess fat from chops with sharp knife.
2 Heat large frying pan; rub with piece of cut-off fat; brown chops on both sides in pan; save for Step 4.
3 Spread undraineU sauerkraut in bottom of 2-quart baking dish; sprinkle with dry mustard and water.
4 Arrange sweet-potato slices around edge; place browned chops in center; sprinkle with salt and pepper.
5 Combine apricot jam and ginger; spread over sweet potatoes.
6 Bake, covered, in moderate oven (350Â°) 1 hour, or until chops and potatoes are tender when tested with a fork.
