|Butter||2 Tablespoon (or margarine)|
|Orange juice||1⁄4 Cup (4 tbs)|
|Dry sherry||1 Tablespoon|
Scrub kumaras; pat dry.
Prick with a fork, kumaras in a 425Â°F (218Â°C) oven 40 to 50 minutes or till tender.
Halve each kumara lengthwise and carefully scoop out center, leaving a 1/4-inch shell.
In a medium mixing bowl combine kumara and margarine.
Beat till fluffy.
Gradually beat in orange juice and sherry.
Place kumara shells in a 13x9-inch aluminum pan.
Spoon the kumara mixture into the shells.
Place pan in center of the cooking grill.
Grill 25 to 30 minutes or till heated through.
To grill uncooked kumaras, prick with a fork and wrap in a square of heavy foil.
Grill 45 to 60 minutes or till tender.
