Twice-Baked Sweet Potatoes
|Sweet potatoes||1 1⁄4 Pound|
|Plain low fat yogurt||1 Cup (16 tbs)|
|Skim milk||2 Tablespoon|
|Curry powder||1⁄8 Teaspoon|
Wrap sweet potatoes in aluminum foil.
Bake at 400Â° for 1 hour or until tender.
Cut potatoes in half lengthwise, carefully scoop our pulp, leaving a 1/8-inch-thick shell.
Combine potato pulp, yogurt, milk, and curry powder in a medium bowl; beat until fluffy.
Stuff potato shells with potato mixture; place on a baking sheet.
Bake 20 minutes until thoroughly heated.
