These Fried Ham and Potato Cake make an awesome snack! Not really cakes, but pan cakes, the Fried Potato and Ham Cakes are easy to prepare too! Make this dish and let me know about it!
Ingredients
  Mashed potatoes 1 Cup (16 tbs)
  Diced cooked ham 1 Cup (16 tbs)
  Chopped parsley 1 Tablespoon
  Onion salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Flour 1 Cup (16 tbs)
  Oil 3 Tablespoon
Directions

Mix potatoes, ham, parsley, and seasonings.
This mixture will be able to be shaped into flat cakes.
Dip each cake into flour, being sure to batter both sides.
Heat oil in skillet.
Saute cakes in oil, adding more oil if needed.
When cakes are browned on both sides, set on a warm platter until ready to serve.
