Glazed Parsnips

  Parsnips 2 Pound, cut into 1/4 inch slices (crosswise 14)
  Butter 2 Tablespoon
  Packed brown sugar 1 Tablespoon
  Snipped parsley 1⁄4 Cup (4 tbs)

Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.
Add parsnips.
Cover and heat to boiling; reduce heat.
Simmer until parsnips are tender, about 10 minutes; drain.
Heat margarine over medium heat until melted; stir in brown sugar.
Mix parsnips and brown sugar mixture until parsnips are coated; stir in parsley.
Microwave Directions: Place parsnips, 1/4 cup water and 1/8 teaspoon salt in 1 1/2-quart microwavable casserole.
Cover tightly and microwave on high (100%) 3 minutes; stir.
Cover and microwave until tender, 3 to 5 minutes longer.
Let stand 1 minute; drain.
Place margarine in small microwavable bowl.
Microwave uncovered until margarine is melted, about 15 seconds; stir in brown sugar.
Continue as directed above.
