Baked Vegetables in Spinach Sauce by Tarla Dalal

This baked vegetable is so easy to make. The addition of spinach makes this baked dish even more delicious and it tastes great when served with garlic bread.

Ingredients

For spinach sauce
Chopped spinach 1 Cup (16 tbs) (palak)
Butter 2 Tablespoon
Plain flour 2 Tablespoon (maida)
Milk 2 Cup (32 tbs)
Salt To Taste
Ground black pepper To Taste
Water 1/4 Cup (4 tbs)
Other ingredients
Boiled mixed vegetables 2 Cup (32 tbs) (french beans, carrots, green peas and cauliflower)
Fresh cream 1 Tablespoon
Processed cheese 1/4 Cup (4 tbs) , grated

GETTING READY

FOR THE SPINACH SAUCE

1. In a wok/kadai, pour ¼ cup of water and bring it to boil. Add spinach and cook on high heat for a minute or two until soft. Turn off the heat. Once cool, make a smooth paste of it by blending in mixer. Keep aside.

2. In a broad non-stick pan, add butter, and when hot, add plain flour and sauté for a minute or two, while stirring continuously. Add milk, mix properly, and cook for a couple of minutes before adding salt and spinach purée. Mix and cook for a minute, while stirring continuously.

3. Turn off heat, add pepper powder, and mix properly.

4. Preheat the oven.

MAKING

5. Now combine together prepared spinach sauce and boiled vegetables, along with salt, pepper, and cream. Mix properly and cook for a minute or two, while stirring constantly.

6. Pour the entire mix in the baking dish and sprinkle cheese evenly. Bake in pre-heated oven at 180 degrees C (360 degrees F) for 10 - 15 minutes.

7. Serve immediately
