Mashed Potato Cakes: Healthy Side Dishes

These mashed potato cakes easily and deliciously go from a snack on their own, to a side dish for dinner, to the school lunch box. Serve them as is or with applesauce for dipping and your little ones will love having something they can easily hold and enjoy!

Ingredients

Mashed potatoes 2 Cup (32 tbs)
Eggs 1 Large , whisked
Parmesan cheese 1/4 Cup (4 tbs)
All purpose flour 3 Tablespoon
For cooking
Butter 2 Tablespoon
For dusting
All purpose flour 1/4 Cup (4 tbs) (((((For dusting)))))

Directions

MAKING

1. In a large bowl, mix together all the ingredients.

2. With an ice cream scooper, take out the potato mixture and make small patties. Lightly dust with the flour.

3. Heat a pan on medium heat and grease with some butter. Place the patties and cook for 3 min on each side. Take out the patties from the pan and set aside.

SERVING

4. Serve the potato cakes with apple sauce or stir fried veggies.
