|Baking potatoes||4 Medium|
|Low fat cottage cheese||1 Cup (16 tbs)|
|Skim milk||1⁄2 Cup (8 tbs)|
|Minced onion||1 Tablespoon|
|Parsley||1 Tablespoon (for garnish)|
Scrub and bake potatoes. Cut in half lengthwise. Scoop out center, reserving shells. Beat pulp with cottage cheese, milk, onion, and salt and pepper to taste. Spoon back into shells. Sprinkle with paprika and parsley. Bake 10 minutes, or until piping hot. Regular or instant mashed potatoes may be substituted for the baked potatoes. Serve directly, or heat in casserole in moderate oven.
