Mashed Parsnip Patties

Ingredients
  Mashed cooked parsnips 3 Cup (48 tbs)
  Finely chopped onion 1 Tablespoon
  Finely chopped parsley 1 Tablespoon
  Salt 3⁄4 Teaspoon
  Poultry seasoning 1 Pinch
  Egg 1
  Bread crumbs 1⁄2 Cup (8 tbs)
  Bacon drippings/Salad oil 2 Tablespoon
Directions

To parsnips, add onion, parsley and seasonings; stir in egg and coarse crumbs.
Shape into 8 patties, and roll in fine crumbs.
Heat drippings in frying pan, and saute until crisply brown on both sides.
