Mashed Parsnip Patties

|Mashed cooked parsnips||3 Cup (48 tbs)|
|Finely chopped onion||1 Tablespoon|
|Finely chopped parsley||1 Tablespoon|
|Poultry seasoning||1 Pinch|
|Bread crumbs||1⁄2 Cup (8 tbs)|
|Bacon drippings/Salad oil||2 Tablespoon|
To parsnips, add onion, parsley and seasonings; stir in egg and coarse crumbs.
Shape into 8 patties, and roll in fine crumbs.
Heat drippings in frying pan, and saute until crisply brown on both sides.
