Seraphina'S Carrot Cake

Ingredients
  Egg 1
  Oil 1⁄2 Cup (8 tbs)
  Honey 1 Cup (16 tbs)
  Tofu 8 Ounce
  Cinnamon 2 Teaspoon
  Baking soda 2 Teaspoon
  Vanilla 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Grated carrot 3⁄4 Cup (12 tbs)
  Whole wheat flour 2 Cup (32 tbs)
  Chopped nuts 1 Cup (16 tbs)
Directions

Turn into 18 well oiled muffin tins 2/3 full.
Bake at 325 F for 40 - 45 minutes for cake rounds.
When cool, frost with Seraphina's Cream Cheese
Frosting, if desired.
