Cheesy Topped Spinach

  Fresh spinach 2 Pound
  Half and half 1 Tablespoon
  Salt 1 Dash
  Pepper 1 Dash
  Onions 2 Small
  Butter/Margarine 2 Tablespoon
  Shredded swiss cheese 4 Ounce
  Tomatoes 3 Large

Remove stems from spinach.
Wash leaves thoroughly; tear into bite-size pieces.
Place spinach in a large saucepan (do not add water); cover and cook over high heat 3 minutes.
Drain well.
Return spinach to pan; add half-and-half, salt, and pepper.
Cook over low heat until thoroughly heated, stirring occasionally.
Saute onion in butter in a medium skillet 5 minutes or until tender.
Remove from heat, and stir in cheese and tomatoes.
Place spinach in a lightly greased 2-quart casserole; top with cheese mixture.
Broil 6 inches from heat for 3 to 5 minutes or until lightly browned.
