Vengna Ne Simla Mirchi Isiu Salnoo ( Brinjal Capsicum Salan )
|Fresh coriander||2 Tablespoon|
|Turmeric powder||1 Teaspoon|
|Chili powder||1 Teaspoon|
|Dhansakh masala||1 1⁄2 Teaspoon|
|Garam masala||1⁄2 Teaspoon|
|Tomato ketchup||1⁄2 Cup (8 tbs)|
|Oil||1⁄2 Cup (8 tbs)|
1. Place the chopped capsicum and brinjal pieces in salted water. Deep fry the brinjals, drain and place in a tray.
2. Cut the onions finely and place in a pan with half a cup of oil. Cook till soft and pink and drain the oil. Add chopped tomatoes, masalas, salt, and the ketchup and cook till you get a smooth pulp over a low fire. Add the brinjals and shift the pan from side to side and allow to simmer for five minutes.
3. Heat the oil in which the brinjals had been fried on a high heat. Drop the capsicum pieces in the hot oil and remove immediately. Drain and place over the brinjals. Garnish with the finely chopped coriander.
