Coconut Orange Sweet Potatoes
|Canned sweet potatoes||68 Ounce|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Chopped pecans||1 Cup (16 tbs)|
|Flaked coconut||1 Cup (16 tbs)|
Combine first 7 ingredients; beat with electric mixer 1 to 2 minutes or until light and fluffy.
Stir in pecans; spoon into a lightly greased 2 1/2-quart casserole.
Bake at 325Â° for about 35 minutes.
Combine coconut and 2 tablespoons butter, stirring well.
Sprinkle around edge of casserole; top with orange slices.
Bake an additional 10 to 15 minutes or until coconut is lightly browned.
