Party-Stuffed Baked Potatoes
|Baking potatoes||4 Large|
|Cream||1⁄2 Cup (8 tbs)|
|Butter||1⁄4 Cup (4 tbs)|
|Chopped chives||1 Tablespoon|
|Grated sharp cheese||1⁄4 Cup (4 tbs)|
Bake potatoes at 425 degrees for 45 minutes to 1 hour or until tender.
Cut potatoes into halves length- wise; scoop out centers.
Mash potatoes; add cream, butter, salt, pepper, eggs and chives.
Whip until light and fluffy.
Pile into shells; sprinkle with cheese.
Bake at 425 degrses for 10 minutes longer or until tops are lightly browned.
