Grilled Young Leeks OnToast

Ingredients
  Fresh fava beans 2⁄3 Cup (10.67 tbs), shelled
  Young leeks 1 1⁄2 Pound (1/2 Inch In Diameter)
  Extra virgin olive oil 3 Tablespoon
  Kosher salt 1⁄3 Teaspoon
  Toasted country style whole wheat pieces/Similar bread 8 (3 X 2 Inch Pieces)
  Lemon 1 , juiced
  Fresh black pepper To Taste (Few Grinds)
Directions

GETTING READY
1. Start by preparing a charcoal, gas, or wood grill, or preheat the broiler

MAKING
2. In a small saucepan , pour 3 cups of water and boil
3. Add the fava beans and blanch for 2 to 6 minutes, drain it and then cool it, rub off the skins of the fava beans, take the leeks andcut off the root ends
4. Lay the leeks and cut off the green tops, cut from the point where the stem branches into leaves, make sure to wash it properly under cold water to remove all grit
5. In a large skillet, pour 2 inches of salted water and boil it, lay the leeks in the pan and poach for 6 to 7 minutes
6. Once the leeks are poached completely, take a sharp knife and use it to to see if it passes easily through the leeks
7. Take out the leeks from the water using a spatula, now lay leeks in a single layer on a flat plate, chill it in the refrigerator for sometime
8. In a saucepan, pour 1 tablespoon of the olive oil, 1/2 cup of water, and salt, also add the skinned fava beans, then
cover and cook over for 35 minutes, keep stirring till mixture becomes soft , then stir the beans into a puree with whipped cream
9. While cooking, add more water, from the refrigerator take out the leeks and set aside to cool at room temperature
10. Take the leeks, and lightly oil them with the remaining oil
11. On the grill, place the leeks on it for 5 to 6 minutes, brown both sides by turning frequently, then set aside in a warm place
12. On a large platter, place the toasts with bean puree, take the leeks and split the middle and lay on the toasts
13. On the toast, place the anchovy fillets and scatter remaining oil along with lemon juice

SERVING
14. Season with pepper and serve with ketchup
