Sweet Potato Salmon Dish

This recipe is a meal in itself..once served on your plate you could add raw nuts of your choice on top and that would be awesome! Very quick and easy to put together, add your favorite vegetables to this dish...make it your own and make it often.
Ingredients
  Sweet potatoes 2 Pound, peeled and steamed
  Onion 1 , minced
  Garlic 2 Clove (10 gm), minced
  Organic extra virgin olive oil 1 Tablespoon
  Organic pacific salmon 2 Can (20 oz), drained and cleaned
  Organic cream cheese 1⁄2 Cup (8 tbs)
  Organic mayonnaise 1⁄4 Cup (4 tbs)
  Organic milk/Plain organic yogurt 1⁄2 Cup (8 tbs)
  Ground nutmeg 1⁄4 Teaspoon
  Organic spinach 5 Cup (80 tbs)
Directions

Preheat oven to 375 degrees.
-Steam sweet potatoes, drain water and mash.
-Fry onion and garlic in oil in pan.
-Drain and clean canned salmon, add to onion mixture in pan,cream cheese, mayonnaise, milk (or yogurt), nutmeg, sea salt and pepper.
(stirring frequently).
-Add spinach leaves to mixture for 3-4 minutes, until spinach starts to wilt.
-Place mixture in a greased 9-inch square baking dish. Spoon potatoes on top evenly.
-Bake 30 minutes..the last 3-4 minutes broil until lightly browned.

I wanted to incorporate salmon more often into our weekly diet. This dish is amazing and so delicious. We love it accompanied with steamed broccoli and cauliflower. Everyone that has tried it has loved it...yummy!!!Sweet potatoes are a great alternative to potatoes and help with weight maintenance as well.
