Sweet potato salmon dish
|Sweet potatoes||2 Pound, peeled and steamed|
|Onion||1 , minced|
|Garlic||2 Clove (10 gm), minced|
|Organic extra virgin olive oil||1 Tablespoon|
|Organic pacific salmon||2 Can (20 oz), drained and cleaned|
|Organic cream cheese||1⁄2 Cup (8 tbs)|
|Organic mayonnaise||1⁄4 Cup (4 tbs)|
|Organic milk/Plain organic yogurt||1⁄2 Cup (8 tbs)|
|Ground nutmeg||1⁄4 Teaspoon|
|Organic spinach||5 Cup (80 tbs)|
Preheat oven to 375 degrees.
-Steam sweet potatoes, drain water and mash.
-Fry onion and garlic in oil in pan.
-Drain and clean canned salmon, add to onion mixture in pan,cream cheese, mayonnaise, milk (or yogurt), nutmeg, sea salt and pepper.
-Add spinach leaves to mixture for 3-4 minutes, until spinach starts to wilt.
-Place mixture in a greased 9-inch square baking dish. Spoon potatoes on top evenly.
-Bake 30 minutes..the last 3-4 minutes broil until lightly browned.
