Spiced Pear And Sweet Potato Vegan Casserole

This spiced pear and sweet potato casserole is a great dish to serve as part of a healthy thanksgiving meal. It can take the place of the average sweet potato casserole, or stand on its own as a central dish for the meal.
Ingredients
  Brown rice 1 Cup (16 tbs) (Short Or Long Grain)
  Sweet potato/Squash 1 , peeled and diced
  Pear 1 , chopped
  Lemon juice 1 Tablespoon
  Raisin/Dried cranberries 2 Tablespoon
  Ground nutmeg 1⁄4 Teaspoon
  Cardamom 1⁄8 Teaspoon
  Ground cloves 1⁄8 Teaspoon
  Fresh parsley/1 tablespoon dried 1⁄4 Cup (4 tbs), chopped
Directions

Put rice in a casserole dish that has a lid, along with 2-3 cups of water. If you use more water, it'll take longer to cook but will be much softer. You can speed up the cooking time if you add water that's already boiling.
Add the rest of the ingredients and the seasonings, changing them for your own tastes, and stir a bit to combine everything.
You can easily bake this ahead of time, and then put it back in the oven with a bit more water to reheat and serve. I hope you like this spiced pear and sweet potato casserole, the latest of my healthy vegan recipes.
